1 x 400g/14oz can chopped tomatoes |

100ml/3½fl oz red or white wine (optional) |

Linguine Pasta 500G |

1–2 tbsp Parmigiano Reggiano |

Heat the olive oil and butter together till butter froths then add the crushed garlic, chirizo and chilli. Add some ground pepper. Gently cook for 5 minutes then add the sliced mushrooms and simmer for a further 5 minutes till the mushrooms are soft. |

Add the chopped tomatoes and wine ( or water) and bring to the boil then reduce the heat to a simmer and add the Basil and Oregano and simmer for 30 minutes. |

For the Linguine bring a saucepan of salted water to the boil than stir the linguine and simmer for about 9-10 minutes or until the linguine is cooked with a bite to it. Drain add some pepper, butter & Parmigiano |

Add the pasta sauce to the linguine and serve with a green salad |
